Tonkatsu is one of the popular dishes in Japan which consists of a pork cutlet, coated with bread crumbs and deep fried. Also, it is served with raw shredded cabbage and a thick tonkatsu sauce.
The two main cuts used for pork cutlet are "pork fillet" and the "pork roast". The difference between pork fillet and pork roast is pork fillet is made with a high quality lean pork tenderloin and it's more expensive while pork roast tends to be more succulent due to the fact it has layers of marbled fat.
Therefore, I would say it's totally up to personal preference for the above choices.
